We have a new schedule this fall and it is - in a word - CrAZy. Not so much for the kids, but for me and this work-at-home gig of mine.
Every day I pack both the kids' lunches around 11:00am. At 11:20am, we load up in the car and I give S her lunch to start munching on. Then I drop C off at Montessori at 11:30 am, where he'll eat his lunch, and drive S back home as she finishes hers.
Once back, we hurriedly put on a pull-up, read a story, sing a song and S goes down for nap. I then have approximately 2 1/2 hours to feed myself and work before I have to wake S up, change her, and load her back into the car to go pick up C at 2:50pm. (It's 2:16pm as I type this which means I have about 13 minutes to finish up my work for today.)
Never before have I had such constricted work hours. There are enough of them (I think?) but I must be maximally efficient during them, I most focus, focus, focus! I also must eat very quickly so I can get down to business.
Which is where this yummy and super simple looking recipe comes in. As soon as I saw it I knew it was going into my lunch rotation and I thought I'd share it with you to put in yours a well. Enjoy!
